Rolled/Flaked oats can be used alongside your other malts in your grain bill - normally at a contribution of around 10%. This type of oats has undergone a heating process which renders the oats starch pre-gelatinized. This means that the starch is ready to be broken down by alpha and beta amylases. It is important to note that this type of oats does not contain any enzymes due to this heating process, so it must be used in combination with your base malts that have high diastatic power.
The use of oats in your malt bill is used to add body and provide a lovely creaminess to your final product. Oats were originally used mostly in stouts - oatmeal stout is a good example - But since then it has been used in a variety of beers such as NEIPAs and wheat beers due to the stable haze and smoothness it provides.
